Lovestruck Raspberry Whip with White Chocolate
Raspberry clouds meet white chocolate dreams in a whip that feels like stolen kisses and summer nights.
Hey Lolly
Why raspberries and white chocolate never fail.
Raspberries and white chocolate have that rare chemistry where the fruit cuts through the sweetness without a fight. This lovestruck raspberry whip captures it perfectly: clouds of aerated white chocolate mousse flecked with raspberry puree, set just enough to hold shape but soft enough to spoon straight from the glass.
Serve it chilled with extra berries, crushed pink meringue and a few curls of white chocolate if you want to impress without doing anything remotely stressful.
Raspberry clouds
Soft cream, sharp berries, white chocolate curls and the sort of pink meringue rubble that makes pudding feel like a small event.
Why this recipe works
Soft, sharp, creamy and just sweet enough.
The raspberries cut through the sweetness
White chocolate brings the dreamy creaminess, but raspberries stop the whole thing becoming too sweet. Their sharpness keeps every spoonful bright, fresh and properly balanced.
The texture does the flirting
Soft raspberry whip, juicy berries, crisp crushed meringue and white chocolate curls give you cloud, crunch and a little bit of drama.
It feels indulgent but light
This is the sort of pudding that looks far more romantic than the effort involved. Chilled, spoonable and made for summer evenings.
The flavour edit
Raspberry, white chocolate and pink meringue rubble.
The whole thing works because the sweetness has somewhere to go. The raspberries bring colour and acidity, the white chocolate brings silk, and the meringue adds that little crisp shatter on top.
Raspberries
Sharp, bright and jewel-like — the fruit that keeps the white chocolate in check.
White chocolate
Use real white chocolate with cocoa butter for a smoother, creamier finish.
Pink meringue
Pretty, crisp and sweet enough to turn the top into a little cloud of rubble.
The whip
Softly whipped cream folded with raspberry puree and melted white chocolate.
One spoonful should give you cream, berry, chocolate and crunch.
The white chocolate curls melt softly into the mousse while the meringue keeps everything crisp.
Before you start
A few things worth knowing before you make the whip.
This is a simple pudding, which means the little details matter. Smooth puree, proper white chocolate and enough chilling time make all the difference.
Fresh or frozen raspberries both work. If using frozen, thaw them first, then push through a sieve for a silkier finish.
Look for cocoa butter on the label. White chocolate coatings made with vegetable fats can behave badly when melted.
Keep the cream softly whipped before folding. Too stiff and the mousse can feel heavy rather than cloud-like.
Blitz any sieved raspberry seeds and pulp into a smoothie or swirl them through yoghurt. Nothing needs to hit the bin.
White chocolate dreams
The topping matters more than it looks.
The shaved white chocolate is not just decoration. It gives the whip a soft, creamy finish that catches against the raspberries and makes the whole thing feel a little more grown up than a bowl of berries and cream.
Make the whip
Fold, chill, spoon, fall slightly in love.
Make the raspberry puree
Puree the raspberries, then push through a sieve if you want the mousse properly smooth and silky.
Finish with the pretty bits
Chill until softly set, then top with raspberries, crushed pink meringue and snowy curls of white chocolate.
A little spoonful of history
From mousse to modern pudding joy.
Whips like this have their roots in mousse, the French word for foam. Originally savoury, mousse soon found its way into sweeter, chocolate-led territory.
This version keeps things simpler: cream, white chocolate and raspberry puree folded into something soft, chilled and quietly heavenly.
Serving notes
How to make it feel like summer in a glass.
Best with
Coffee, fizz, extra raspberries, more white chocolate curls, and absolutely no one asking whether you made the meringue yourself.
Make it when
You want joy without heaviness. It is chilled, pretty, spoonable and exactly the sort of pudding that looks more difficult than it is.
Seasonal swaps
Use strawberries in spring, passion fruit in autumn, or frozen raspberries in winter. Their flavour concentrates beautifully as they thaw.
Summer nights
Chilled, spoonable and just dramatic enough.
This is the dessert you make when you want joy without heaviness. Pair it with coffee or fizz, and let the berries do their heavenly work.
