There are times when only the crisp puff of butter There are times when only the crisp puff of buttery pastry will do and this is one of them. These sausage rolls are gorgeously simple, rich with mature Cheddar, sweetened with a slick of sun-dried tomato chutney, and padded generously with good-quality sausage meat. The flavours know each other well, smoky, sharp, mellow, savoury all sealed in a golden casing that flakes at the slightest touch. I use @driverspickles chutney here because its tang cuts through beautifully, but you could just as easily swap in caramelised onion, or even a lick of mustard. Serve them warm, when the cheese is still molten and the pastry sighs under the knife. Or cold, the next day, straight from the fridge, standing at the counter with the back door open. They’re snack, sustenance, and secret joy, disguised as party food.
