Save this for when you want proper flavour, quick, quick, quick! 🦀🌶️🍚 RECIPE (serves 4) ✍️ • 4 cups cooked brown rice🍚 • 2 tbsp neutral oil 🛢️ • 2 eggs, lightly beaten 🥚 • 1 large onion, diced 🧅 • 1 red pepper, diced 🔴 • 3 garlic cloves, minced 🧄 • 2 tbsp fresh ginger, minced 🫚 • 1 dried chilli (or ½ tsp flakes) 🌶️ • 2–3 tbsp gochujang 🥄 • 2 tbsp rice wine vinegar 🥢 • 1 tsp toasted sesame oil 🥄 • 250g crab claw meat 🦀 • 2 limes (zest + juice) 🍋 • Large handful Thai basil 🌿 • Spring onions, sliced (optional) 🌱 Method ⚡ 1. Hot wok, 1 tbsp oil → soft-scramble eggs; remove. 2. 1 tbsp oil → onion + pepper 2 mins; add garlic, ginger, chilli 1 min. 3. Rice in; fry 2 mins till hot and a little toasty. 4. Stir in gochujang + rice wine vinegar till glossy. 5. Fold in crab gently; return eggs. 6. Off the heat: lime zest + juice, basil, drizzle sesame oil. Taste, adjust. Serve with extra gochujang + lime wedges. 🥄✨ Pro tips 💡 • Keep rice cold, pan hot. • Don’t overwork the crab (keep those luxe flakes!). • Finish with lime + sesame for that final perfume.
