I used to believe compound butter belonged only to French kitchens. Garlic, parsley, lemon zest – that was my idea of luxury. Then I discovered miso butter, the Japanese take on the idea, and everything changed. Brushed over cod fillets, it transformed the fish into something extraordinary.
The ribboned courgette noodles came from a gadget obsession. Like everyone who buys a spiraliser, I ran every vegetable through it. Courgette noodles with sesame dressing stuck. They’re crisp, nutty, and refreshing – like the best salad, disguised as noodles.
The final touch was crispy shallots. Fried until golden, they scatter over the top like edible confetti, adding sweetness, crunch, and balance.

Make the Miso Butter
- In a small bowl, mix softened butter with miso paste until smooth. Set aside. Prepare the Crispy Shallots
- Dust the sliced shallots lightly with flour. Heat vegetable oil in a small pan and fry until golden and crisp. Drain on kitchen paper and set aside. Cook the Cod
- Preheat the oven to 200°C (180°C fan). Place cod fillets on a lined baking tray. Spread miso butter generously over each fillet. Bake for 10–12 minutes, or until the fish flakes easily with a fork. Make the Sesame Courgette Noodles
- While the cod cooks, whisk sesame oil, soy sauce, rice vinegar, and honey in a bowl. Toss in the spiralized courgette until coated. Assemble the Dish
- Plate the sesame courgette noodles, top with baked miso butter cod, and scatter with crispy shallots. Garnish with sesame seeds and herbs. Serve immediately.
Notes
Swap cod for salmon or sea bass — miso butter works beautifully with other white fish too. For extra crunch, add toasted cashews or peanuts on top.
